Sweat Potato Gnocchi Dough

Serves 8 - 10 
 
Ingredients:
4 large sweat potato
180 ml fresh ricotta cheese
1/2 cup parmesan cheese
1 tabs brown sugar
1 teas salt
1/4 teas nutmeg
about 2 - 3 cups of plain flour 

Method:
·      Pierce the potatoes with a fork.
·      Microwave the potatoes for 5 – 6 mins on each side, until they’re tender.
·      Slice the potatoes in half and let them cool.
·      Mash the potatoes and add the ricotta cheese. Mix them together.
·      Add Parmesan cheese, brown sugar, salt, add nutmeg; mash to blend.
·      Mix in flour, about ½ at the time until soft dough forms.
·      Place the dough on a floured surface, knead a few times and shape into a rectangle. Cut into 6 – 7 equal portions.
·      Roll each section into a 1inch diameter rope, flouring as needed.
·      Cut rope into little pieces.
·      Give the Gnocchi shape to the pieces with the help of a fork.
·      Place them on baking sheet.
·      Bring a pot of salted water to boil.
·      Add the Gnocchi to the boiling water cook 5 – 6 mins, until tender. Drain and set aside on clean baking sheet.
·      Serve with sauce.


















Basically you can sure your Gnacchi with any sauce but in these pictures as you can see I've served them with my Cheesy Sauce which you can find the recipe from the blog as well.

And some fresh herbs to taste and look better. I've chopped some fresh sage and rosemary leaves you can pick other  sauces and herbs such as tomato sauce and basil.

Cheesy Sauce

Excellent for pastas, seafood, chicken and even for steaks!!!

 Serves 4 - 6

Ingredients:
2 cups milk (heated)
1/4 brown onion
3 cloves garlic
fresh sage leaves
fresh rosemary leaves
3 tabs salted / unsalted butter (your choice)
3 tabs plain flour
1 tabs parmesan cheese (grated)
120 gr Gouda cheese (grated)
75 gr Double Gloucester United Kingdom Cheese (grated) - can't find it, easily use Cheddar Cheese -
Salt & Pepper to taste

Method:
                Grab a small saucepan combine milk, onion, garlic , sage and rosemary leaves.
                Cook them together for 5 mins.
                DO NOT boil it.
                Remove from heat and let it stand for couple of mins.
                Remove garlic, onion, sage and rosemary leaves from the pan.
                Cover with lid to keep it warm and let it stand a bit while you're preparing the other ingredients.
                In a sauce over medium heat, melt the butter.Stir in the flour and cook, keep string.
                Carefully add the milk, whisking constantly.
                Reduce the heat to low and continue to whisk until the sauce is smooth and slightly thickened approx 4 - 5 mins.
                Add grated cheeses.
                Cook over low heat, whisking constantly, until the cheese is melted and the sauce is smooth.
  • Add salt and pepper for taste.

Beyza's 3 Cheese & Salami & Olive Pizza

Serves 4


Ingredients:
250 gr mozzarella cheese (grated)
500 gr capricciosa or scamorza cheese (grated)
some parmesan cheese (grated)
salami of your choice
kalamata de-seeded black olives (chopped)
pizza base ( you can find the recipe for that from the Exchange Kitchen blog archive)
pizza sauce ( you can also find this recipe from the Exchange Kitchen blog archive)


Preheat the oven 200ºC.


Method:
  • Put some parchment paper to the oven tray.
  • Place the pizza base into the oven tray.
  • Put the pizza sauce onto pizza base and spread it.
  • Put some cheese on the top.
  • Put the salami as much as you want.
  • Put more cheese on the top of salami.
  • Put chopped olives in the middle.
  • Add some parmesan cheese to finish it.
  • Put the tray to the oven.Cook it for approx 12 to 15 mins.
  • Wait until it looks crispy and golden coloured.
                                                             ENJOY IT!!!





Serve with some salad!

Beyza's Pizza Dough


Serves 4

Ingredients:
2 cups of warm water
2 1/2 tabs salt
2 packet ( 7gr each) active yeast
4 1/2 cups plain flour 
(you'll need some more 
when you're rolling out the dough)
2 tabs honey
spray olive oil


Method:
               Put the warm water in a bowl.
              Add salt.Combine it.
              Add yeast.Combine it.
                Let them sit for 5 mins.
               Add the flour.
               Add the honey.
               Mix them with the help of a  mixer (mix master).

You can also remove the dough from the bowl and knead by yourself.

               Clean the bowl and spray with olive oil.
               Place the dough into the bowl and cover it up with plastic or tea towel.
               Let it sit for approx 55 to 60 mins.
               Remove the dough from the bowl.
               Divide into 2 - 3 pieces.

It depends on your taste if you want a thin pizza or thick pizza dough.

               Take one of the dough balls and start rolling out it.
               Continue until it gets thin.
               You can give a circular shape or whatever shape you like to the dough.

Make some pizza(red) sauce and put that on the top of the dough and add some toppings: cheese, olives, salami whatever you like to put and bake it on the preheated oven, here we go you're done!









 




Beyza's Pizza (Red) Sauce


For 2 large pizza

Ingredients:
140 gr tomato paste
1 1/2 cup boiling water
1 1/2 tabs dried Italian herbs 
(Can't find it? Don't worry,
put 1 teas dried basil, oregano, rosemary instead)
1 teas hot chili
1 teas smoked paprika
2 teas minced garlic
2 tabs olive oil

Method:
               Take a saucepan put the olive oil in start heating up.
               Add the tomato paste.
               Add the boiling water right after tomato paste and stir them up.
               Add the herbs, stir it up.
               Add the garlic mince and continue to cook for a minute.
               Remove from heat.

Your pizza sauce is ready to GO!!!
