Beyza's Eggplant Dish ( Moussaka )

Serves 4 - 6

Ingredients:

4 eggplants 
500gr mince
3 brown onions
4 - 5 clove of garlic
2 carrots 
4 - 5 tomatoes
1/2 cup of tomato paste 
some boiling water ( to dilute the tomato paste )
large amount of olive oil

Method:

               Peel the skin of the eggplants.(make them look like zebra skin)
               Cut the eggplants into 2 inch coupes.
               Put the chopped eggplants to a big bowl and cover with water and add some sea salt stir it for a second.Putt a plate or something like that as a lid on the top.Let them sit for 15 to 20 mins like that.
               Chop garlic and onions very finely.
               Peel the skin of carrots and grate them very finely.
               Peel the skin of tomatoes and de-seed the tomotoes.
               Chop the tomatoes.( you do not need to chop them finely leave them big so you can taste them better when you're eating.)
               Strain the eggplants and dry them with some paper towel.
               Grap a deep saucepan put a large amount of olive oil and start adding the eggplants.
               Fry the eggplants.
               Grap a bowl put some paper towel on the bottom of it.
               Remove the eggplants when they get brown and place them into the bowl.
               When you're done removing the eggplants, add chopped garlic and onions to the saucepan and start browning them with the leftover olive oil if there's not to much leftover add some more olive oil to the saucepan.
               When the garlic/onions are browned add the carrots to them.And cook them together for couple of mins.
               When carrots are cooked add the mince to the mixture. Start browning the mince.
               When the mince cooked and all browned add the chopped tomatoes to the mince mixture.
               In the meantime, press the kettles button and boil some water.
               Add some boiling water to the tomato paste and stir until it's combined.
               Add the tomato paste to the mince mixture.
               And finely add the eggplant to the mince mixture.
               Stir a bit, let them combine.
                                   Serve it with some pasta or rice!!!
