Serves 4 - 6
Ingredients:
2 cups milk (heated)
1/4 brown onion
3 cloves garlic
fresh sage leaves
fresh rosemary leaves
3 tabs salted / unsalted butter (your choice)
3 tabs plain flour
1 tabs parmesan cheese (grated)
120 gr Gouda cheese (grated)
75 gr Double Gloucester United Kingdom Cheese (grated) - can't find it, easily use Cheddar Cheese -
Salt & Pepper to taste
Method:
• Grab a small saucepan combine milk, onion, garlic , sage and rosemary leaves.
• Cook them together for 5 mins.
• DO NOT boil it.
• Remove from heat and let it stand for couple of mins.
• Remove garlic, onion, sage and rosemary leaves from the pan.
• Cover with lid to keep it warm and let it stand a bit while you're preparing the other ingredients.
• In a sauce over medium heat, melt the butter.Stir in the flour and cook, keep string.
• Carefully add the milk, whisking constantly.
• Reduce the heat to low and continue to whisk until the sauce is smooth and slightly thickened approx 4 - 5 mins.
• Add grated cheeses.
• Cook over low heat, whisking constantly, until the cheese is melted and the sauce is smooth.
- Add salt and pepper for taste.
