Cheesy Sauce

Excellent for pastas, seafood, chicken and even for steaks!!!

 Serves 4 - 6

Ingredients:
2 cups milk (heated)
1/4 brown onion
3 cloves garlic
fresh sage leaves
fresh rosemary leaves
3 tabs salted / unsalted butter (your choice)
3 tabs plain flour
1 tabs parmesan cheese (grated)
120 gr Gouda cheese (grated)
75 gr Double Gloucester United Kingdom Cheese (grated) - can't find it, easily use Cheddar Cheese -
Salt & Pepper to taste

Method:
                Grab a small saucepan combine milk, onion, garlic , sage and rosemary leaves.
                Cook them together for 5 mins.
                DO NOT boil it.
                Remove from heat and let it stand for couple of mins.
                Remove garlic, onion, sage and rosemary leaves from the pan.
                Cover with lid to keep it warm and let it stand a bit while you're preparing the other ingredients.
                In a sauce over medium heat, melt the butter.Stir in the flour and cook, keep string.
                Carefully add the milk, whisking constantly.
                Reduce the heat to low and continue to whisk until the sauce is smooth and slightly thickened approx 4 - 5 mins.
                Add grated cheeses.
                Cook over low heat, whisking constantly, until the cheese is melted and the sauce is smooth.
  • Add salt and pepper for taste.
